Product Description
Production area:
Cazzago San Martino, hamlet of Calino, from Palazzo vineyard facing North-West and Sottobosco vineyard facing North, North-West.
Vines:
Chardonnay 80% and Pinot noir 20%.
Breeding method:
Spurred cordon with around 8.000 vines per hectar.
Harvest:
by hand in boxes with careful manual selection of bunches before pressing. It starts in the second two weeks of August.
Yield:
35 hl of wine per hectar.
Vinification:
soft pressing of whole grapes to obtain first-pressing must and initial fermentation in stainless steel tanks. A 20% ferments in French oak barrels.
Cuvée:
blend of Chardonnay and Pinot noir base wines.
Refermentation in the bottle:
obtained with Franciacorta method in the company’s underground cellars. Maturation for thirtythree months on yeast lees before disgorging.
Colour:
pale straw yellow.
Foam:
very fine, thick and really persistent.
Perlage:
very fine and continuous.
Bouquet:
particularly fine and complex, it smells rich with an inkling of fruit of apricot and white peach, pineapple, lightly unripe golden apple and red fruits: from cranberry to raspberry, white flowers: from acacia to kalicantus, of citrus honey and acacia, lightly balsamic of peppermint and greek basil, hints of vanilla and halmond pan brioche notes.
Flavour:
excellent structure and velvety, tangy and with a good touch of tartness blended with wine’s powerful richness, long, persistent and a very soft end. Aftertaste with white fruit, citrus and slight vegetal notes, with vanilla, hints of hazelnut and freshly picked almond.
