Product Description
Production area: Cazzago San Martino, Calino, vineyards Undergrowth and palace located on a gentle hill facing East, North-East.
Grapes: 100% Chardonnay. Forms of conduct are the Guyot and spurred cordon with about 6000 to 8000 plants per hectare.
Harvest: by hand, in crates, with manual selection of the grapes before pressing. Beginning in the third week of August.
Yield: 50 hl of wine per hectare.
Winemaking: soft pressing of whole grapes and initial fermentation in stainless steel tanks heat-conditioned at a temperature of 15-16 ° C. A portion, about 30%, fermented in French oak barrels for more steps.
Cuvée: obtained by the union of the four base wines Chardonnay.
The sparkle is done with traditional Champagne method in underground cellars, with a low percentage of “liquer de tirage” to get a finer perlage and creamy. The yeast aging continues for at least thirty months before disgorging.
Color: straw yellow with light green shades.
Perlage: fine, persistent and continuous, very fine and compact froth.
Bouquet: delicately immature fruit (pineapple, pear, apple, vineyard peach, cherry), with a slight vein vegetable-balsamic (star anise and balsamic greek), with white flowers (magnolia grandiflora, acacia, honeysuckle), spices ( coriander seeds and red pepper), pan pastries and sweet rolls Genoese, with a hint of almond and walnut qualified in acacia honey.
Taste: excellent consistency and harmonious, with a fresh acidity that goes perfectly with the sweetness and texture of the wine; Full, rich, fruity, complex and of great finesse. The aftertaste gather notes honeyed, spicy, floral and fruity, with a final perception of black cherry (Napoleon type).
